Pura Vida Bone Broth
any combo - grassfed, well-raised and clean - necks, feet, femurs, knuckles
3 lbs - beef, lamb, chicken - - a mixture will offer a good collagen base
Water to fill crock pot
1/2 cup vinegar
1 tablespoon of sea salt

3 to 4 oz fresh ginger root
2 large cloves garlic
2 slices dried reishi mushroom
3 oz fresh turmeric
4 to 5 fragrant star anise
⅔ bay leaves
1 tablespoon juniper berries, whole
1 tablespoon black peppercorns, whole
1 cinnamon stick
A few whole cloves
1 tablespoon fennel seeds
Garlicky Green Sauce
To add to chicken or fish or steamed vegetbales
½ cup ground pepita seeds (grind with some coconut oil)
½ cup coconut milk
1 bunch cilantro
5 cloves garlic
½ inch chunk ginger
½ cup water
sea salt to taste
Cauliflower Tabbouleh
1 cup cauliflower rice, shred a chunk of cauliflower on a box grater
1 large bunch organic flat leaf parsley, finely chopped
1 bunch mint, finely chopped
2 very ripe, red plum tomatoes, chopped (omit, if on anti-inflammation diet)
½ cucumber, diced
½ red onion, finely diced
1/4 cup olive oil
Juice of 1 or 2 lemons
1/2 teaspoon sea salt
Freshly ground pepper
Optional –
¼ cup chopped greek feta
Zucchini Fritters
Great with garlicky green sauce
3 large zucchini
2 extra-large egg white
2 tablespoons almond meal or 1 tablespoon coconut flour
1 teaspoon paprika
Salt and pepper
3 tablespoons clarified butter, ghee, or unsalted butter
Using either a hand-held grater or a food processor fitted with the shredding blade, shred the zucchini. Place the shredded zucchini in the center of a large, clean kitchen towel. Bring the sides up and twist hard to express all of the liquid. You may have to do this a few times to get all the liquid out; the drier the zucchini, the crisper the pancakes will be.
Place the shredded, drained zucchini in a large mixing bowl. Add the egg white, almond meal, paprika, and salt and pepper to taste, tossing to blend in the seasonings. Heat the clarified butter in a large frying pan over medium heat.
When very hot but not smoking, spoon in the zucchini mixture to make individual circles about 3-1/2 inches in diameter (you will need to do this in batches).
Fry, turning once, until cooked through, golden brown, and crisp, about 5 minutes. Using a spatula, transfer to a double layer of paper towels to drain.
If necessary, place on a baking sheet in a low oven to keep warm until ready to serve.
Tahini Dressing
¼ cup tahini
1 tbsp extra virgin olive oil
3 tbsp lemon juice
1 garlic clove
½ tsp sea salt
½ tsp black pepper
1 to 3 tbsp water
Place of the ingredients in a blender and blend and until it is full of air and smooth.
Salsa Verde
● 10 small to medium tomatillos
● 3-4 serrano chiles (or jalapenos)
● 1/2 white onion
● ¼ bunch cilantro
● Salt to taste
Peel and clean the tomatillos. Wash the chiles and cut the stems off. Place the tomatillos and chiles in a pot and cover with water. Bring to a boil and then cook for about 10 minutes. You will know when they are done when they change from a bright green to an olive green. Let them rest to cool down.
Strain them but keep the liquid and set apart. In a blender combine tomatillos, chiles, onion, a large handful of cilantro and salt to taste. Mix, taste for salt and consistency, if it is too thick, add a little bit of the liquid you set apart.
Note: Uncooked tomatillos are tart and acidic, so we’ll roast them to sweeten them up and lower their acidity. Serranos are sharper and have a slightly different flavor than jalapenos, but can be used if you prefer less sharp taste.
Energy Smoothie
A 1-tbsp. serving of almond butter contains 9 g of fat, 89 percent of which is mono- and polyunsaturated fats. When you replace saturated fats with these healthy types of fats, you may be able to reduce your blood cholesterol levels. One tbsp. of the butter also provides 26 percent of your daily value for vitamin E, based on a 2,000-calorie diet. Vitamin E supports immunity and acts as an antioxidant. Almond butter also increases your smoothie's protein content by 2 g and fiber content by 1 g for each tablespoon added. Almond butter is also a source of B vitamins, magnesium, potassium, copper, iron, calcium, zinc and manganese.

For every liter of filtered water combine
1 to 2 tablespoon of raw honey or Grade B maple syrup (non if you are strict non-carbohydrate diet)
